Observation (CORRECTED DURING INSPECTION): - During time of inspection, several buffet inserts were measuring at 40C, staff informed that it was end of buffet service and it is turned down approximately one hour before buffet service ends
- Environmental Health Officer instructed to discard all inserts on buffet line during time of inspection.
- Items were disposed of during time of inspection
Corrective Action(s): - ALL FOODS BEING HOT HELD ON HOT HOLDING UNIT MUST BE 60C OR HOTTER AT ALL TIMES.
- DO NOT TURN DOWN TEMPERATURE UNTIL SERVICE IS OVER.
- All hot foods must be kept hot, all cold foods must be kept cold.

Observation (CORRECTED DURING INSPECTION): During time of inspection, low temperature was dispensing 0ppm of chlorine residual.
Owner was able to correct issue during time of inspection, dishwasher was able to dispense at least 50ppm of chlorine residual afterwards
Corrective Action(s): - Staff must check if dishwasher is dispensing adequate amount of chlorine sanitizer prior to starting dishwasher and when new chemicals are changed

Observation: During time of inspection, rodent activity detected in upstairs storage area.
- Accumulation of droppings found underneath shelving and some packaging upstairs.
- All affected items were disposed of during time of inspection.
- No food products affected.
Corrective Action(s): - All shelving upstairs must be moved and all droppings in facility removed and areas sanitized
- Upstairs storage areas must be organized, any affected items must be discarded
- All entry points must be plugged/ sealed with 'Pest Block Spray foam', steel wool or hard wire mesh
- New pest control service/ assessment must be done
- Daily monitoring must be done

Observation: Heavy grease accumulation on commercial fume hood/ canopy observed.
Operator informed that it will be serviced in the coming week.
Corrective Action(s): Staff are required to clean and degrease canopy slates/ baffles in addition to professional cleaning.

Observation: - During time of inspection, metal lid of main prep cooler was missing and in disrepair.
All equipment must be in good working order with no components missing, food inserts located within cooler had plastic lids but prep cooler requires its lid to adequate maintain and cold hold food products.
- Operator informed he would get it repaired
Corrective Action(s): Ensure all equipment in facility is in good working repair and order

* Sweets display cooler at 4C on bottom shelf where sweets with milk are stored.

- Test strips available for monitoring sanitizer concentrations
