Observation: Many foods and food containers in walk-in cooler uncovered and subject to contamination.
Corrective Action(s): Cover all food in walk-in at all times. Verfiy at follow up inspection date noted on report.

304 - Premises not free of pests [s. 26(a)]
Observation: Mouse activity noted in many parts of kitchen, but droppings and other activity significant in dry food storage area and mop room.
Grain beetle infestation noted in corn meal container and open lagangna noodle package in dry food storage room. Beetles also noted on shelves in this room. Looked in other containers minus top shelf in room, but due to a very cluttered room i was not able to perform full assessment.
Possible rodent activity noted in walk-in cooler, but difficult to determine due to significant accumulations of stagnant water and food debris noted.
Corrective Action(s): Immediately call for pest control operator (PCO) to visit facility and set up comprehensive integrated pest control program for facility. Implement recommendations made by PCO and this office to control pest activity.
Clean up facility as noted in report and have completed for review at follow up inspection date noted.
Perform audit of dry food storage room and discard any food , inside containers or freely stored on shelves) with noted beetles or cobwebs from larvae noted. Review at follow up inspection date noted.
Immediately discarded corn meal and noodles.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: Food and stagnant water accumulations noted in multiple areas of kitchen providing food for pests;
Holes in walls observed, especially in mop room, but possibly in other areas difficult to see because of the general clutter;
Activity in walk-in cooler unknown cause;
Corrective Action(s): Block off holes into and out of walls as discussed. Follow PCO recommendations for abatement and control of pests.
Clean up and keep clean the facility.
Review at follow up inspection date noted.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Many areas of kitchen and upstairs banquet facility observed dirty. These include but are not limited to:
- dray food storage area;
- back door area floor along wall, on shelves and under equipment/counters;
- Cookline floor, shelves and hard to reach areas;
- Handwash stations in kitchen (both), including downspouts and adjacent wall areas;
- Dishpit up down and all around;
- cooler doors handles and inside cavities, and upstairs general work surfaces;
- staff washroom;
- Floors in general in hard to reach areas, around legs of equipment and at edges of doorways;
**Pictures taken of most of the above noted areas.**
Corrective Action(s): General, complete and quality clean up is required in most areas of facility, inside and out of equipment. Review at follow up inspection noted on report.

312 - Items not required for food premises operation being stored on the premises [s. 18]
Observation: Excessive number of empty containers in multiple areas of facility observed that are impacting the ability for staff to keep things clean and organize.
Equipment and old broken or unused cooling units cluttering up the facility, especially the banquet kitchen, but also in the main floor kitchen. Almost every work surface and storage shelf in banquet space is occupied with "things". Removing unused or unrequired items will allow cleaning and organization to improve.
Corrective Action(s): Remove these items as discussed to free up floor space and keep work spaces cleaner and more manageable.
Review at follow up inspection date noted.
**Upstairs - all coolers and equipment not removed must be turned on for audit purposes at follow up inspection.

Comments

Inspection focussed on general sanitation and issues related to pests and cleaning.
A comprehensive review of the equipment function including coolers and sanitizing will take place at follow up inspection date noted.

Fix all broken taps at sinks in kitchen and banquet room.
Make sure to discard food products in upstairs upright cooler as discussed. All cooling units upstairs should be empty, but turned on for review.
