Routine inspection conducted. Facility is in excellent sanitary condition and is well managed and maintained. The following observations were made:

1. Temperatures (Max: 4C for coolers; -18C for freezers; Min: 60C for hot-holders)
- Prep cooler and cooling wells at 2C
- Walk-in cooler at 2C
- Chest freezers maintain -18C
- Beverage coolers at 4C
- No hot-holding conducted at time of inspection. Ensure that the hot-holder reaches a temperature of 60C before placing pizza inside
- All refrigerator units equipped with accurate thermometers

2. Hygiene and Sanitizing
- Sanitizing pail available at 200 ppm chlorine residual at time of inspection
- Handwash station in kitchen area and in washroom adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- All utensils, equipment (e.g. meat slicer), pizza cutters / slicers, cutting boards, and knives maintained in good sanitary condition
- Dough mixer bowl cleaned and sanitized after each use
- 3-compartment sink available for manual warewashing, with bleach and drain plugs
- Washroom facility is sanitary

3. Storage
- All food items, ingredients, take-out containers are elevated at least 6" off floor - excellent
- Dry storage items securely stored inside plastic food-grade bins with tight-fitting lids
- All items are covered when not in-use with food-grade seran wrap, or inside original containers

4. Pest Control
- No signs of recent pest activity at time of inspection
- Screen door is intact and generally in good condition

5. Administrative
- Permit posted, operator has submitted permit fees for this fiscal year on July 13, 2018 (invoice shown at time of inspection)
- Operator has FoodSafe 1

6. Recommendations
- Instead of periodically replacing cardboard underneath dry storage items, acquire plastic shelf liner for easy cleaning
- Install shelf liner all along left edge of shelving near mop sink to prevent splash water from contacting stored utensils
