- handwash stations maintained with liquid soap and paper towels - walk-in cooler measured at 1C - walk-in freezer measured at -18C Note: moderate frost and ice building up on fan units, monitor and keep door closed as much as possible. On-site day maintenance informed. - new low temp dishwasher being commissioned but not operational at time of inspection. Sign posted on dishwasher indicating not to use by staff. - floor tiles in storage area leading out to compactor have been replaced - bar towels stored in 200ppm chlorine solution - all other coolers measured at 4C or colder - all other freezers measured at -18C or colder - hot holding of chicken, burgers, nuggets at 60C or hotter - temperature logs maintained - 3 compartment sink method used for all washable items until new dishwasher is put into service, 200ppm quat measured in 3rd compartment - spray sanitizer measured at 200ppm quats - no signed of pest activity at time of inspection - time tracking done on condiments kept at room temperature Note: at time of inspection, stickers made up manually due to depleted stock of printer stickers (due in later in the day)
