Observation (CORRECTED DURING INSPECTION): The following cold potentially hazardous food items were stored in the improperly working front display cooler for >6hrs:
- sausage roll at 12C
- meat pie at 11C
- meat foldover at 12C
Corrective Action(s): Discard the food items. These cold potentially hazardous food items must be stored at < or = 4C at all times.

Observation (CORRECTED DURING INSPECTION): The wire racks used to cool and store bread was covered in dirt, grease, and food debris. Bread was stored unwrapped and directly touching the wire racks.
Corrective Action(s): Scrub and clean the wire racks. Remove the build up of dirt and grease. Cleaning of the wire racks must be implemented in your cleaning schedule.

Observation (CORRECTED DURING INSPECTION): There was a large bucket of sanitizer with presoaked wiping rags inside the designated handwashing sink.
Corrective Action(s): Do not store any equipment or sanitizer inside the designated handwashing sink. This sink is designated for handwashing only.

Observation: The front display cooler was measured at 15C at the time of the inspection. There was significant build up of ice on the compressor located at the bottom. The person in charge stated that she was aware of the issue. No temperature log was available at the time of the inspection that showed malfunctioning cooler.
Corrective Action(s): Fix or replace the improperly working cooler. Do not store any cold potentially hazardous food items inside this unit. All coolers must maintain temperature < or = 4C at all times.

Comments

- General sanitation is good.
- All handwashing stations stocked with cold/hot running water, soap, and paper towels.
- All other coolers (upright) < or = to 4C
- Freezer (upright) < or = to -18C
- Temperature log was unavailable. You must begin a temperature log for all coolers and freezers. Template for temperature log will be provided to the operator via email.
- Two compartment sink available for manual dishwashing. Bleach sanitizer available. Do not store any dirty dishes or equipment inside the sanitizing compartment of the sink.
- Surface sanitizer available in white bucket with presoaked wiping rags at 100 ppm bleach solution. Ensure to have surface sanitizer readily available both in the back and front of the kitchen.
- Dry storage area is good. Dry food items stored in carts with proper lids. Ensure the handles of scoops do not touch the food items.
- No signs of pest activity.
- Could not verify FOODSAFE certified staff at the time of the inspection. Ensure to keep copies of all FOODSAFE certificates on site for review by the health inspector.
Note: FOODSAFE certificates obtained prior to July29th, 2013 will expire on July 29th, 2018.
