Observation:
Food, debris and accumulation of dirty water present on the floor of the walk-in cooler, especially under the shelves. Manager informed that it is difficult to clean under the shelves due to the positioning of the lowest shelf.
Corrective Action(s):
- Increase space between the bottom shelf and the floor of the walk-in cooler (at least 6 inches). This is to facilitate cleaning and for better air circulation in the cooler.
- Clean under all shelves of the walk-in cooler. To be corrected by September 24, 2022. Ensure to keep cleaning in all hard to reach areas on a regular basis.

Routine Inspection:
Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
Temperature of walk-in cooler and under-counter cooler for sauces maintained at or below 4 degrees Celsius.
Note: under-counter cooler across cookline is not in use. Manager informed that the cooler will either be replaced or repaired. No food is to be stored in this cooler at this time.
Note: under-counter cooler close to storage room is not in use for cold storage.
Temperature of walk-in freezer and 2-door freezer maintained below -18 degrees Celsius.
Manager informed that the baffles of the ventilation canopy are cleaned on a regular basis.
3-compartment sink available for manual warewashing. Drain plugs available.
Concentration of chlorine (bleach) sanitizer in bucket = 200 ppm. Wiping cloth stored in sanitizer - very good.
Storage room organization satisfactory.
Chemical storage satisfactory.

In addition to the violation above, the following requires your attention:
- Work towards replacing all the ceiling panels above and surrounding the cookline.
- Replace the fly strip near the hand washing station as it is quite full.
