Corrective Action(s): Ensure low temp dishwasher is sanitizing dishware at 50 ppm chlorine. Repair unit.

Observation: Scoops sitting in dry bulk food. Some plastic bowls and containers used as scoops requiring food handlers to put finders and hands into the food to retrieve scoop.
Corrective Action(s): Ensure all scoops are proper scoops made out of easy to clean, durable material with handles stored outside of food. Replace unsuitable scoops.

Observation: 1.Potato press has food debris left on unit (slicer and press portions appear clean)
2. Bottom shelves of back kitchen prep tables have build up of dry food debris.
3. Floor of dry storage area - build up of food debris in hard to reach areas
Corrective Action(s): Ensure all areas of food premise are regularly cleaned. Special attention to the areas noted above.

Observation: 1.Low temp dishwasher noted 0 pp chlorine
2. 2 H/W sink in front kitchen have paper towel dispensers not feeding paper trowel
Corrective Action(s): 1. Ensure dishwasher is functioning properly and dispensing 50 ppm chlorine for sanitizing dishes. Technician called and repaired unit (replaced dispenser tube) during inspection.
2.All dispensers must be functioning properly - allowing for proper hand washing. Repair paper towel dispensers or replace units completely to meet requirements.

-Coolers: <= 4 C
***monitor pizza prep cooler as temps were higher during inspection. Temp logs indicate temp drops under 4 C throughout the day. In
-Freezers: <= -18 C
-Temp logs recorded daily
-Handsink in back kitchen fully supplied.
***Add paper towel dispenser to handsink in main bar
-Glass dishwasher noted 12.5 iodine
-Food protected: covered, labelled, stored off the ground and organized
-Sanitizer available throughout facility and janitor dispenser station : 200 ppm QUATS
-No signs of pest activity noted during inspection - pest control onsite - reports sent to maintenance.
-General sanitation satisfactory

-New wooden boards for burgers have been purchases and appear in good condition - old worn boards discarded
