- Restaurant has completed renovations, ready for reopening.
- Layout matches approved floor plans. *Garbage compactor area still being worked on - OK.
- Front customer service area and beverage station satisfactory
- Ensure broken floor tiles in walk-in cooler and storage area leading out to compactor are replaced or sealed/grouted/finished to provide a smooth surface.
- All hand washing stations were supplied with hot and cold running water, liquid soap, and paper towels. Two new hand sinks installed.
- New walk-in cooler measured to be at 2C. Ensure this cooler is equipped with a separate thermometer.
- Quats sanitizer solution available at 200 ppm from dispenser
- Bar towels stored in 200 ppm chlorine sanitizer solution. Changed every 4 hours.
- Dishwasher dispensed 100 ppm chlorine to dish surface, detected after rinse cycle
- Walk-in freezer measured to be at -20C
- All other coolers measured to be at 4C or colder
- All other freezers measured to be at -18C or colder
- All refrigeration units equipped with separate thermometers
- Hot holding units measured at above 60C
- Egg station: raw shell eggs will be held at room temperature - ensure to use time tracking stickers.
- Pest control in place
