Observation (CORRECTED DURING INSPECTION): No sanitizer was available in the front prep area.
Corrective Action(s): Ensure food grade sanitizer is available in each food preparation area to allow for sanitizing of food contact surfaces. Quats sanitizer spray bottle at 200ppm was placed at the front service area.

Observation: Walk-in cooler fan area was leaking water.
Corrective Action(s): Service fan area to prevent leaking water. Ensure foods are not stored below the leaking water. Technician has been contacted and will service the cooler today.

Comments

-Walk-in cooler was at 4C.
-Walk-in freezer was at -18C.
-Front sandwich prep coolers were at 4C.
-Under counter cooler was at 4C.
-Hot holding was greater than 60C. Soup and meatballs were cooked to greater than 74C prior to hot holding.
-Temperatures are checked and recorded daily.
-Cleaning and sanitizing carried out in the 3-compartment sink. Quats sanitizer was at 200ppm.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Slicer and shredder were found to be clean and sanitary.
-General food storage practices good at the time of inspection. Foods properly covered and stored off the ground.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and single use paper towels.
-FOODSAFE Level 1 equivalent valid until June 20 2024.
