Corrective Action(s): Empty ice machine and thoroughly wash and sanitize before making ice again.

Observation (CORRECTED DURING INSPECTION): Bag of red onions in the walk-in cooler was on the floor.
Corrective Action(s): Onions were placed on a crate at time of inspection. Ensure all food items are stored on shelf and not directly on the floor.

Observation: Debris and grease observed underneath the cooking area (just underneath the grill area) and on the floor behind and on the side of the deep fryer.
Corrective Action(s): Keep cooking area free of grease and food debris to help control breeding of pests (rodents in particular) and maintaining kitchen area in sanitary condition.

Comments

Hand wash stations provided with liquid soap and paper towels.
Sanitizer (chlorine) was at >100 ppm.
Low temp dishwasher had chlorine residual of 100 ppm.
Walk-in freezer was below -18 deg C.
Walk-in cooler was at or below 4 deg C.
- Inside walk-in cooler was organized and food items were covered.
Prep line coolers were at or below 4 deg C.
No hot holding at time of inspection.
Temperature log was available and up to date.
Pest control monitoring is still aggressively going for the month of Oct to ensure rodent issues are under control.
No signs of pests noted at time of inspection (i.e. no new droppings noted)
Kitchen area is now being kept clean. Some areas still require attention such as the cooking area (remove some new grease/oil on the floor and other debris just underneath the grill area). Keeping the kitchen in sanitary condition is an on going task. Power washing of kitchen floor is to be continued at least weekly. Sweeping and mopping of the floor daily and paying attention to hard to reach areas. Efforts of cooking staff regarding maintaining cleanliness of kitchen are noted. Keep to your Sanitation Plan to maintain and/or exceed current cleanliness of the kitchen.
Staff washrooms were clean and provided with sanitary facilities.
Patrons' washrooms were in sanitary condition.
Bar area:
Hand sink provided with liquid soap and paper towels.
Glass ware washer had 50 ppm chlorine residual.
Coolers were at or below 4 deg C.S
Sanitizer (chlorine) in bucket was at 100 ppm.
General sanitation of the area was in satisfactory condition.
