Observation:
- Plexiglass light fixture cover on righthand side of preparation cooler still to be replaced.
- Scoops, bowls, and other dispensing utensils stored directly in dry products.
- Cloth used to cover food products and to lay onto trays/plates.
Corrective Action(s):
- Operator still waiting on contractor to measure, prepare, and install custom plexiglass light fixture cover. Consider using a light tube cover. Correct by January 9, 2017.
- Store all scoops, bowls, and anything used to to dispense dry products outside of dry products. Store in a sanitary manner at all times. Correct immediately.
- Do not use cloth to cover food products or to line trays/plates. Corrected at time of inspection.

Low temperature dishwasher registers 50ppm chlorine during the final rinse cycle.

Beach sanitizer available for use in labeled spray bottles. General sanitizer formula: 1 oz of regular unscented bleach to 1 gallon of water.

Exhaust canopy clean.
General sanitation is satisfactory.
Walk in cooler at 3 degrees C.
2 door freezer at -19 degrees C.
Upright freezer at -16 degrees C.
