Observation: Noted mould / grime on blade of food processor sitting on drain rack after it hand been manually washed.
Corrective Action(s): Replace blade as it cannot be adequately washed and sanitized. Review manual ware washing methods with staff. Ensure equipment is thoroughly scrubbed before sanitizing and allowed to air dry completely.

Observation: Flour and debris build up noted on several surfaces throughout premise. Under and behind equipment, door handles of freezers and coolers, mould build up on silicon caulking around 3-compartment sink, flour bins, soup warmer, behind espresso and bread slicer machine in front service area, floor tiles and grout, walk-in cooler, etc.
Corrective Action(s): A deep clean of the premise is required. Contact inspector within 2 weeks to arrange a follow-up inspection. Review your sanitation plan and educate staff for hourly, daily and weekly cleaning requirements.
