Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: Protein items in prep/display cooler measured above 4 C. Observed range of temperature between 7 and 10 C. Inserts near the customer side of unit better. All below 4 C. Measured three insert troughs. Again, the trough located on the customer side at 2.5 C while the worker side at 11 C. (area below the inserts).
Correction: Have service technician check unit to verify it is working to proper specs. As temporary measure: A) limit quantities of proteins to half normal capacity to encourage quicker turnover of product; B) Cover inserts in problem line of proteins; C) Ensure staff keep clam shell lid closed when not directly making sandwiches.
Reinspection required. Date noted on report.

Owner emailed pics of fixed cooling unit. Visited facility. Frost again observed on most inserts. Temperature in units below 4 C.
No further issues.
