Observation (CORRECTED DURING INSPECTION): Observation: The surface sanitizer was reaching below the required concentration. Glass washer in the kitchen area was sanitizing below the required concentration at 0ppm.
Corrective Action(s): Corrective action: Ensure to maintain the surface sanitizer and glass washer sanitizing at the required concentration minimum of 50ppm chlorine. NOTE: Surface sanitizer solution replaced and now at the appropriate concentration.

Observation: Observation: The surface sanitizer dispenser was not dispensing proper amount of sanitizer solution. Glass washer sanitizing below the required chlorine concentration 0ppm.
Corrective Action(s): Corrective action: Ensure to keep surface sanitizer dispenser unit and glass washer in good working order. Temporary measure: Use the main dishwasher to sanitize the glasses.

Temperature check:
- Walk-in cooler at 4C or below
- Walk-in freezer at -18C or below
- All lime coolers near prep area at 4C or below
- Hot holding (rice) at 60C or above
- Hot holding (sauce) at 60C or above
- All units are equipped with thermometer

Sanitation and Maintenance:
- 2-low temp. dishwashers in the kitchen area (one for regular dishes and other for glasses)
- Regular low temp. dishwasher sanitizing at 100ppm chlorine
- No signs of pest activity at the time of inspection. Abell do bi-weekly inspection
- Public washroom maintained in sanitary manner
- Garbage area clean
- Food stored off the floor and covered in storage area
- Staff wearing proper uniform and hair are tight back
