Observation (CORRECTED DURING INSPECTION): Soup in the warmer had internal temperature measured at 39'C. Staff had advised the unit was not preheated prior to transferring the soup- less than 30 minutes prior to the inspection. The soup was taken back tot he kitchen to be reheated and warmer was on at this time.
Corrective Action(s): Ensure soup is reheated until it reaches 74'C and transfer to preheated warmer (60'C) at all times.

Comments

Routine inspection conducted:

-Handwash stations adequately supplied with liquid soap, paper towels and hot/cold running water.
-Coolers operating under required temperature of 4'C; Freezers operating at/below required temperature of -18'C.
-Hot-holding units operating above 60'C, except mentioned above. Extra sausages cooked for brunch hours.
-Temperature monitoring system in place. Logs maintained.
-200ppm Quats available in buckets to hold wiping cloths.
-High temperature dishwasher achieved 83.1'C at the plate level after final rinse.
-Front servery satisfactory. Dipper well in use for scoops.
-No evidence of pest activity observed. Washroom satisfactory.

General sanitation of the facility satisfactory except the area mentioned above.
