308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: The lid of the chest freezer containing fish and other frozen foods was not in good working order as the hinge was broken and yellowish insulation material was flowing out of it. The operator mentioned that they will replace it with a similar sized chest freezer. Note: The temperature of the freezer was -18 degrees C (0 degrees F) or colder.
Corrective Action(s): Replace the chest freezer with an intact freezer that is able to maintain a temperature of -18 degrees C (0 degrees F or colder); correct in 3 months time (September 15, 2016). Continue covering the food placed inside this freezer to protect it from contamination.

315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
Observation: The display cooler (storing pop and tartar sauce) lacked a thermometer. The operator mentioned that they broke this thermometer while trying to place it in an accessible location.
Corrective Action(s): Obtain a new accurate thermometer and place it in the above noted display cooler; Correct by June 24, 2016 (within a week) . Ensure that accurate thermometers are maintained in all of the coolers and freezers to check their temperatures throughout the day and to continue maintaining daily temperature records.

Follow-up inspection:
-The cooler near the frying area was repaired and it was at 4 degrees C (40 degrees F) or colder. It contained a thermometer inside it as well.
-Temperature logs were being maintained.
