Food Handler Hygiene
o Hand wash stations are fully supplied with liquid soap and paper towels in dispensers
o Operators had clean clothing for food preparation
o Staff washrooms appear clean and are fully supplied for hand hygiene
o Public washrooms are clean and fully supplied for hand hygiene

Storage Temperatures
o Cold holding Coolers are below 4C
o Cold holding Freezers are below -18C
o Hot holding food items are at 60C, 75C for miso soup and rice, 60C for sauce.

Food Processing and Food Protection
o Cooling - Temperatures are being monitored; cooling is done in small batches - making teriakyi in small batches and cooling in smaller metal containers.
o Specialized Food Processing - sushi rice (purple and white), pH 4.0 measured
o Approved Food Source - Operator keeps receipts of food ingredients from an approved source
-reviewed receipts for salmon and tuna loins and other ingredients
o Food Storage - Food is stored in covered containers.

Maintenance and Sanitation
o 3 Compartment Sink is fully supplied with bleach
-Dishwasher is not being used; facility is take out only with single use containers. l
o Sanitizer bottles/buckets - have 200ppm Quats (800ppm measured, instructions given to dilute with water)
o Storage of chemicals is separate and away from food
o Condition of equipment and surfaces - food contact surfaces and equipment are in good repair and clean condition
-Operator has painted some surfaces and repaired some surfaces with stuck on surfacing.
-Grills are being cleaned at the time of inspection
-Clutter has greatly improved and bowls are being stacked neatly on shelving.
o Pest control - there are no signs of pests at the time of inspection.
