- Handwashing station fully equipped with hot and cold running water, liquid soap, paper towels
- All coolers 4C and below
- All freezers -18C and below
- All hot holding 60C and above.
- Temperature checked twice a day and logged
- High temperature dishwasher measure 71C and above at final rinse at plate level
- QUAT sanitizer measure 200ppm in buckets
- Staff has valid FOODSAFE certificate
- No signs of pests

Note:
- The 2hour and 4hour holding time allotment for room temperature holding of potentially hazardous foods (PHFs) must be strictly followed.
>>> Time of expiry observed for 2hour allotment exceeds 2hours.
>>> 2:30pm was time of review of time tracking sheet, 4:45pm is labelled in a column under 2hour allotment. Unknown exact time when food item was pulled out before time tracking sheet was reviewed.
>>> This is unacceptable. Expiry time must be logged accurately and followed through.
>>> Should further observations be made regarding improper room temperature holding of PHFs, no room temperature hold of PHFs will be allowed.
