Observation (CORRECTED DURING INSPECTION): (Repeated violation) 0 ppm QUATS sanitizer was present in the sanitizer spray bottles. QUATS dispenser dispensed 0 ppm QUATS at first - after dispensing some amount, 200 ppm was reached. All the sanitizer spray bottles were replenished with 200 ppm QUATS sanitizer.

Comments

1. Hygiene and Sanitizing
Hand washing stations are equipped with hot and cold running water, liquid soap and paper towels
General sanitation is adequate
High temperature dishwasher final rinse cycle noted at 77.4C
2 compartment sinks used for manual dishwashing. Drain plug is available.
Washroom facility in a sanitary condition - currently closed to the public and is used for staff washroom only.
In-use utensils stored in a sanitary manner
Excellent handwashing noted
Staff demonstrates good hygiene
Ice machine is in sanitary condition

2. Temperature (Maximum 4°C for coolers and -18°C for freezers, minimum 60°C for hot holding)
Temperature of drink cooler noted at 4°C
Temperature of prep table cooler and its inserts were noted at 4°C
Temperature of freezers noted at -18°C
Temperature of cooked rice noted at 66°C
Temperature of up right coolers noted at 4°C
Temperature log available and up-to-date (logged twice daily)
Accurate thermometers available in every refrigeration units

3. Pest
No evidence of recent pest activity at the time of inspection.

4. Food and non-food storage and handling
Foods are adequately covered and labelled.
Dry storage is adequate. All goods maintained off the floor >15cm.
Frozen sashimi was defrosted in the cold running water bath in its original packaging.
Single-use take out containers are stored in a way to protect from contamination
Chemical stored in a separate area away from food.

5. Administrative
Health permit posted in a conspicuous location and up-to-date
Staffs with FoodSafe Level 1 on site.
