Observation (CORRECTED DURING INSPECTION): - Insert of jalapeno ranch dressing (in line cooler) was above 4C. Internal temperature of product measured 9.9C.
Product label states keep refrigerated. Staff reported product was placed in cooler in the morning. Unknown how long product has been above 4C.
Note: Other potentially hazardous foods stored in cooler and cooler itself were maintained at 4C or colder
Corrective Action(s): - Corrective action taken: Insert of jalapeno ranch dressing noted above was discarded at time of inspection.
- Ensure potentially hazardous foods are kept at 4C or colder.

Observation (CORRECTED DURING INSPECTION): - Soiled cloth used for wiping food contact surfaces. Sanitizer in spray bottle was being used; however, in use cloth not kept in sanitizer solution to prevent microbial growth.
Corrective Action(s): - Keep in use wiping cloths in sanitizer solution or use clean cloth (or paper towel) each time. Follow established sanitation procedures.
Note: Operator reviewed sanitation procedures at the time of the inspection. Procedures state that a clean cloth is to be used.

Observation: - Temporary splash guard (piece of metal) installed at warewashing sink. Duct tape used to affix metal. Duct tape is not a suitable maeterial/surface. Crevices/folds also noted in material where debris can collect. Design/installation not suitable.
Corrective Action(s): - Remove temporary splash guard and install proper splashguard. Surfaces must be durable and easily cleanable without crevices where debris can collect.

Comments

- Premises maintained in sanitary condition.
- Handwashing sink was supplied with liquid soap and paper towel
- Observed frequent handwashing by foodhandling staff
- Coolers were operating at 4C or colder
- Freezer was maintaining food products in a frozen state
- Temperatures of cold holding units are checked twice daily. Records present and were up to date. Ensure corrective action is taken and recorded if temperatures are not within required range.
- Foods in coolers were covered and labelled with date
- Mechanical dishwasher operational. 50ppm chlorine detected on dish after cycle.
- Trays washed by manual dishwashing in 3 compartment sink. Plugs/stoppers present.
- Chlorine test strips present for checking dishwasher
- Quats test strips present for checking sanitizer for manual warewashing
- Quats sanitizer solution (200ppm) present in spray bottles for sanitizing food contact surfaces. *See violation above regarding in use wiping cloths
- No signs of pest presence noted at time of the inspection. Recommend placing traps (eg. glueboards) for monitoring.
- Operator present and reports he has completed Foodsafe level 1. Certificate not available. To be verified.
Note: Some personal items noted to be stored on shelving above food preparation tables. Relocate personal items to separate area away from food preparation and storage areas.
