-Follow-up inspection to Jan 15, 2018. -Prep cooler has been serviced. Fan was not properly circulating cool air. Inserts were at or less than 4C at the time of inspection. -Chef has reviewed with staff proper disassembly and cleaning and sanitizing of slicer. Slicer was found to be clean and sanitary at the time of inspection. -Cleaning has been carried out in the walk-in cooler. Light bulb has been replaced with a lighter light. -Shatter shields are on order. -Please contact the inspector if you have any questions or concerns.
