Observation (CORRECTED DURING INSPECTION): Bleach sanitizer concentration measured to be <10ppm at time of inspection.

**Corrected during inspection** Operator added bleach to sanitizer solution sink. Sanitizer measured 200ppm chlorine.

Recommendation:
1. ensure and educate staff understand importance of measuring bleach to add to water, and the correct mix ratio (1/2 tsp household unscented bleach / 1L water; or 1tbsp household unscented bleach / 1 gallon water).
2. purchase "chlorine test strips" that can read up to 200ppm chlorine so staff can test sanitizer to ensure they have the proper concentration.

Observation: 1. Half-eaten personal food observed on pizza prep table. Staff eating puts their hands in close contact with their mouths. If handwashing procedures not followed, may potentially contaminate food.

2. **Repeat** Some food products in walk-in cooler observed to be uncovered. Food can potentially become contaminated if items were to fall into it.
Corrective Action(s): 1. Staff is not to eat at prep stations.

Observation: 1. Food debris build up around pizza prep area, under hand sink. This can potentially be an attractant to pests, and contaminate equipment.

2. Build up of grey-black material in door frame of sweets cooler. Located very close to food, and can potentially if splashed onto food products.
Corrective Action(s): 1. Clean area between pizza prep and handsink. Include this area as part of the regular cleaning schedule.
