Observation: Hot holding unit is not capable of hot holding at >60c. Tested with thermometer in water using a tiny metal container which was in contact with the bottom shelf which contains the heating unit. Temperature of the water did not rise past 54c.
Corrective Action(s): Remove hot holding unit from premises.
