Observation:
General sanitation is good, but there is food debris under shelve & equipment and on shelves. There is excess items on the premises that makes it difficult to access these areas to clean.
Corrective Action(s):
Detailed cleaning of hard to reach areas are needed on a more frequent basis. Items require to be removed from cupboard and shelves so these surfaces can be washed. Ensure the lowest shelving rack on a unit is at least 6" above the floor so a broom/mop can get under and clean.

Observation:
Premises is small and there is limited storage space. There appears to be excess and/or unused food, equipment and containers being stored on the premises. Too much clutter prevents proper cleaning of all areas of the premises, and this may attract pests.
Corrective Action(s):
De-clutter, discard, and/or remove all unused, broken or excess items from the premises.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers were 4C or colder; freezer was -14C; thermometers present; and no temperatures recorded.
- High temperature dishwasher was 72C during the rinse cycle, at the plate's surface, as per the max/min thermometer.
- Hand washing sinks stocked liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in spray bottle was 200ppm.
- Food storage done correctly. Foods stored in food grade containers; covered; labeled; in groups with raw proteins on lowest shelves below RTE foods; and 6" off the floor on shelves or platforms.
- General sanitation is satisfactory. Improvement needed in mentioned areas.
- No signs of pests.
- FoodSafe certified staff present.
- Ensure foods are cooled in a clean and safe area, away from dishwashing and food processing. Foods shall be uncovered and sitting in a bath of ice to meet time & temperature requirements.
- FIFO rule followed. No expired foods in use.
