Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: The egg grill is on at all time, temperature noted at >120 deg. C. Egg molds attached to the grill was accumulating food debris and temperature noted at 45 deg. C. These are cleaned and sanitized once at the end of the day.
Correction: Clean and sanitize the egg molds. Equipment, utensils and food contact surfaces that are in continuous use must be cleaned and sanitized at least every 4 hours.
Correction date: Today and onward.

Observation: Pink mold was found inside the upper part of ice machine.
Correction: The ice machine should be cleaned as required. Remove the ice and clean and sanitize the inside of the ice machine as per manufacturer's instructions.

Follow-up to routine inspection #KLIU-C4PTFS
- Uncertain during routine inspection if the dishwasher was to achieve sanitation through high temperature or chemical method. However dishwasher was able to achieve an adequate sanitizing cycle by maintaining 50-100ppm chlorine detected at the plate during follow-up inspection therefore no violation was made.
- Test strips are on site to verify chlorine concentration.
- Floor area by dishpit was mopped at time of inspection. No significant pooling of water around dishwasher noted.

Facility has no outstanding critical violations as of July 2021. All previously mentioned violations have been corrected.
