Observation (CORRECTED DURING INSPECTION): 1) Rags found throughout food prep area
- keep all wiping rags in your provided sanitizer buckets
2) Found ice scoops left in ice in 2 different bins
- you have sanitary holders your for scoops - use them.
Corrective Action(s): Rags moved to rag buckets.
Scoops washed through low temperature dishwasher.

**Always keep an extra bag of "Apex solid-san pellets" for when your low temperature dishwasher runs out!
Dishwasher measured 50ppm chlorine sanitizer residual
Quat sanitizer tested at dispenser (3 compartment sink) >200ppm
**Please double check your concentrations as much greater than 200ppm requires a rinse step after sanitizing
The top of the ice machine was opened by request of EHO at time of inspection. Machine appears well maintained.
All coolers throughout upstairs measured 2-4C
Walk in cooler 3C
Freezers all functional, with fry dispensing unit at only 0C.
Hot held gravy and items in UHC cabinet all well above 60C
Soft serve machine currently on a "heat" cycle
General sanitation of facility good. No evidence of pests. Pest control company on contract - provides monthly inspections.
Monitoring records on site and available for review.
Discussed lack of sharps container for needle disposable in washrooms - plumbing issues have occurred due to needles getting stuck in toilets. Recommend adding biohazard sharps disposal boxes in both men's and women's washrooms.
