Observation (CORRECTED DURING INSPECTION): Cutter vegetables and salad dressings stored in the preparation cooler measured with an internal food temperature of 9C. Ambient air temperature for the preparation cooler measured at 9C.
Corrective Action(s): Transfer the aforementioned food items in to a functioning cooler that can maintain an ambient air temperature of 4C or less.

Observation (CORRECTED DURING INSPECTION): Metal bristle brush used to clean the panini grill. Metal bristle may fell off and contaminate the food.
Corrective Action(s): Operator discarded the metal bristle and will be using the metal panini press for cleaning.

Observation: Preparation cooler located near the dishwasher measured with an ambient air temperature of 9C.
Corrective Action(s): Service / fix the aforementioned preparation cooler to ensure an ambient air temperature of 4C or less is maintained. Do not store any potentially hazardous food in this cooler in the meantime. Correct by: Dec 5, 2019.

- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- 200 ppm quats and bleach available in spray bottles.
- High temperature dishwasher registered 75C at the plate level. Reminder that this dishwasher is not designed to run multiple batch of dirty dishes consecutively.
- Ice machine maintained in a sanitary condition.
- Food products stored off the ground.
- Temperature records maintained and available for review.
- No pest activities observed at the time of inspection.
