Observation (CORRECTED DURING INSPECTION): Sanitizer for the sushi bar area was not available.
Corrective Action(s): Before any preparation or opening, ensure there is sanitizer available to store wiping cloths. Bleach sanitizer measured 100 ppm at time of inspection.

Observation (CORRECTED DURING INSPECTION): Container of salmon was found sitting on the floor. Packaged salad was stored at the bottom with the raw protein products.
Corrective Action(s): Do not store container of salmon on the floor. Store salads above raw meat/seafood products.

Observation: Floor in the kitchen area and sushi bar area had grime and filth. Also, cabinets and shelves in both area are starting to have build up.
Corrective Action(s): Thoroughly clean floor, counter tops, shelves and cabinet to remove grime/filth and then sanitize with bleach.

Observation: Ice machine in the hot water tank room is no longer in use.
Corrective Action(s): Remove items no longer required for the business. Space in the facility is very limited.

Health permit posted
Hand sinks provided with liquid soap and paper towels.
Chlorine sanitizer measured >100 ppm (kitchen area).
Quats sanitizer measured 200 ppm (dining room area).
All coolers were at or below 4 deg C.
Freezers were at or below -18 deg C.
Hot holding for rice and miso soup was at or above 60 deg C.
High temp. dishwasher reached 71 deg C or above.
Temperature log was available and up to date.
Operator has current and valid FoodSafe 1 certification.
Older hand sink was replaced by a newer sink in the sushi bar area.
Washrooms were clean and provided with toilet paper, liquid soap and paper towels.
Items to address:
Clean kitchen (floors, equipment, etc.)
FSP for kimchi
Organize dry storage area and other non-food storage
Renovations may be required (areas are starting to show wear and tear and may no longer have ease of cleaning.
Ceiling tiles installed were not the current food service type that are easy to clean.
