Observation (CORRECTED DURING INSPECTION): A) Observed staff member washing meat slicer blade in hand sink desipite operator's signage at two compartment sink to use warewashing sinks only - see violation code 401 for more details.
B) Noted sanitizer solution mixed with soap (appeared bubbly).
Corrective Action(s): A) Ensure food equipment is properly washed and sanitized at the two compartment sink on site.
B) Do not mix soap and sanitizer solution

Observation (CORRECTED DURING INSPECTION): All hand wash stations were fully equipped with soap, paper towel, hot and cold running water but were obstructed with containers of sanitizer solution stored in the hand sinks. Staff member was observed washing meat slicer blade in one of the hand sinks in the deli meat section.
Corrective Action(s): Ensure hand wash stations are unobstructed and fully accessible at all times. Designated hand wash stations are to be used for hand washing purposes only.

Corrective Action(s): Ensure all foods are protected at all times. Obtain lids/barriers/covers/food wrap for the breads that customers dispense themselves.

Comments

All coolers 4C or less (deli display cases, retail coolers, olive bar, walk in cooler downstairs...etc) with exception of one prep cooler unit that was not in use at time of inspection.
Bulk cheese containers stored in retail open face cooler unit at 3C. Covering containers appeared clean with self closing lids. Scoops to dispense cheese of adequate length to prevent contamination. Ensure this area is monitored by staff.Freezers less than -18C (walk in downstairs, reach in retail freezers...etc).
Freezers (retail and walk in downstairs) -16C to -21C.
Hot holding of soup 66C. Soup is made at the cucina location next door.
General sanitation satisfactory. No obvious sign of pest activity noted at time of inspection. Back door was closed at time of inspection.
Reviewed manual ware washing procedures with manager at time of inspection. Ensure all staff are trained.
Refrigerated delivery trucks no longer at premise. They are stored at the warehouse.
