Observation (CORRECTED DURING INSPECTION): Found that there were no sanitizer buckets filled in the kitchen. Staff were unaware. Wiping cloths observed lying on food contact surfaces and in staff aprons. Wiping cloths must soak in sanitizer when not in-use. Wiping cloths must never be stored in staff aprons/pockets. Sanitizer must be changed at least every 2 hours to maintain a concentration of 200 ppm. Sanitizer solution were made up at the time of inspection, wiping cloths placed inside.

Low-temperature dishwasher had 50 ppm chlorine at the plate level upon final rinse cycle
Glasswasher achieved 12.5 ppm iodine at the glass level upon final rinse cycle - operator's test strips
Quats sanitizer at dispenser had 200 ppm quats - strips available on-site
All coolers operating at </= 4C *NOTE: Open-top prep coolers tend to run high on temperature - lower the level of food items that cannot be used up in 2 hours to maintain temperature of </=4 C; close the lids during slow periods
All freezers operating at </= -18C
No hot-holding observed
Foods in coolers/freezers covered, labelled and stored off the ground
