Comments

-Walk-in cooler was at 4C.
-Walk-in freezer was at -18C.
-Kitchen pizza prep station was at 4C.
-Kitchen prep coolers were at 4C. Inserts for prep area are covered after lunch rush has finished.
-Line freezer was at -18C.
-Serving area dairy cooler was at 4C.
-Ice cream freezer was at -18C.
-Hot holding was greater than 60C.
-Temperatures are checked and recorded daily.
-Chemical dishwasher had a final rinse of 50ppm to 100ppm chlorine on the dish surface (minimum of 50ppm required for proper sanitizing).
-Handwash stations easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer pails were tested at 200ppm.
-Hot potentially hazardous foods cooled in an ice bath in the walk-in cooler.
-Frozen foods properly thawing in walk-in cooler.
-General food storage practices good at the time of inspection. Foods stored off the floor and covered.
-Ice machine clean and well maintained. Ice scoop in bar and ice machine stored in a sanitary manner.
-Facility serviced by a professional pest control operator. Pest control reports indicate no pest activity. A couple rodent droppings found in the bar area. Areas affected by rodent droppings must be properly sanitized.
-Staff washroom clean and sanitary.
