303 - Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation: High temperature dishwasher was not in good working order and element was burnt according to the technician who arrived on-site. Element will be ordered from Ontario according to the technician. Dishwasher was unable to run a cycle and unable to meet the sanitizing standard. Dishwasher was in good working order yesterday according to the Operator. Therefore, food equipment could not be propery washed and santiized in the dishwasher.
Corrective Action(s): 1) Repair, re-service, or replace the high temperature dishwasher with another commercial dishwasher that is able to meet the sanitizing standard (dishwasher final rinse temperature of 71 degrees C or hotter at the plate for high temperature dishwashers); Correct by February 19, 2019.
2) In the meanwhile, make sure all food contact surfaces (e.g. pots and pans, inserts, pizza trays) are washed, rinsed, sanitized, and air dried. Operator setup 100 ppm chlorine sanitizer in the second compartment of the 2-compartment sink. Only single-service utensils are used on-site (Corrected).

Observation: Permit to operate was not posted. Operator stated that it fell down a few days ago however could not find it during the inspection.
Corrective Action(s): If you are able to find the permit, then post it in location at the restaurant where the public is able to view it. If you are unable to find your permit to operate, then complete Fraser Health's permit replacement form and provide a $30.00 replacement permit fee payment to Fraser Health to obtain a replacement permit to operate and then post it in a conspicuous location. Correct within 1 month.

Observation: A few pots are stored on a shelf that is on the floor in the dry storage room.
Corrective Action(s): Make sure the dry storage room is re-organized so that all pots and pans and food equipment is stored at least 6 inches off the floor on a clean shelf off the floor; Correct today.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1) Lid of chest freezer was not intact on the interior surface and was falling apart.
2) Probe thermometer was not in good working order and could not be turned on during the inspection.
3) High temperature dishwasher was not in good working order and could not run a wash or rinse cycle. High temperature dishwasher could not meet the sanitizing standard of dishwasher final rinse temperature of at least 71 degrees C at the plate.
Corrective Action(s): 1) Repair/replace the lid of the chest freezer so that it is fully intact on the interior surface; Correct within 1 month. Continue covering food inside this chest freezer.
2) Operator purchased a probe thermometer during the inpsection that was in good working order (corrected).
3) 1) Repair, re-service, or replace the high temperature dishwasher with another commercial dishwasher that is able to meet the sanitizing standard (dishwasher final rinse temperature of 71 degrees C or hotter at the plate for high temperature dishwashers); Correct by February 19, 2019. Public Health Act Correction ORDER was issued.

Observation: Operator's FOODSAFE Level 1 certificate expired on July 29, 2018.
Corrective Action(s): The Operator must renew their FOODSAFE Level 1/equivalent course training by taking and passing a full FOODSAFE Level 1/equivalent course; Correct within 1 month and provide the district Environmental Health Officer of Fraser Health a copy of your valid FOODSAFE Level 1/equivalent course certificate upon successfully completing a FOODSAFE Level 1/equivalent course.

Comments

Handsinks in the food prep. area and staff washroom were supplied with liquid soap, hot and cold running water, and paper towels.
Walk-in-cooler (1.9 degrees C), pizza prep. cooler (3.7 degrees C), and one door cooler (3.6 degrees C) were at or below 4 degrees C.
Refrigeration units were equipped with thermometers.
Both chest freezers and one door upright freezer were at or below -18 degrees C.
100 ppm chlorine sanitizer was available in a spray bottle.
No signs of recent pest activity were present at the time of inspection.
Screen at the backdoor was taped and back door was shut during the winter season. Make sure the screen remains intact in the future as well to protect the food premises from the entrance of pests.
