On Follow-Up:

-Paper towel dispenser at the main hand sink in the kitchen has been relocated higher up.
-Work order provided from Glory Temp Control for walk-in freezer. Defrost times (30 min. long) were reconfigured to 10am, 6pm and 2am and the temperature setting was adjusted from -10 degC to -20 degC.
-Dishwasher rinse temperature was 71 degC at plate level. Okay.
