- Meat section and equipment maintained in sanitary condition
- Handsink supplied with hot and cold water, liquid soap and paper towel
- Quats sanitizer solution present in warewashing sink and in bucket for sanitizing surfaces and equipment. Solutions measured 200ppm quats.
- Staff reported surfaces are cleaned and sanitized between species. Grinders are cleaned and sanitized every 4 hours.
- Ambient temperature of meat processing area was 8C
- Walk-in cooler (shared with deli) 0-1C
- Retail display meat coolers were 1-3C. Product levels maintained below product fill lines.
