203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): During the inspection noted a large amount of fried food (chicken, shrimp, etc.) spread out on cookies sheets being cooled. As per staff, food has been cooling for about 20 minutes and they are preparing to placed them into their walk-in cooler. However, the temperatures noted for these food range around 20 - 25C. No temperature log was available. Staff quickly moved all these food that were sitting out at room temperature into their functioning walk-in cooler.
Corrective Action(s): Discussed with the operator the danger for leaving food out at room temperature for an extended time period. Cooling logs were provided to the operator and it is expected for the operator to educate staff on how to use the logs properly and any food that will be sitting out for cooling at room temperature prior to placing in the cooler must have the cooling logs completed. In the future, any food sitting out at room temperature without the accompanying temperature log to demonstrate that proper cooling is taking place, these food WILL BE DISCARDED. No exemption. Operator agrees.

Observation: Heavy carbon buildup noted on the floor of one section of the cookline - by pass-through window.
Corrective Action(s): Clean and sanitize this area to prevent potential fire hazard.

Observation: Cardboard noted being used as liner on the floor below the cookline - holding the wok and lining the shelves in the walk-in freezer.
Corrective Action(s): Remove all cardboard that is being used as liners. All surfaces on the premises must be imprevious to moisture and easily cleanable.

Routine inspection conducted today:
Handwash stations, including washroom, accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4.0C or below.
All freezer units were at -18.0C or below.
Food in general is stored protected and in the proper storage hierarchy.
Rice was being hot held at over 60.0C in the rice cooker.
Bleach sanitizer spray bottle available. 200 PPM chlorine residual detected.
High temperature dish machine was able to reach 198F at the rinse gauge and 74.7C at the plate level during the rinse cycle.
No signs of pest activities noted during the inspection.
Overall sanitation was satisfactory.
Operator still has a valid FOODSAFE certificate - onsite during the inspection (expires in May 2028).
