Observation (CORRECTED DURING INSPECTION): Reheating not observed today but records show that soups are reheated to 160F. The required reheating temperature for food such as soups that will be hot held after reheating is 165 F (74 C). This is also the temperature shown on your food safety plan (top of temperature recording chart).
Corrective Action(s): Ensure that all staff are aware of required food reheating temperatures. For foods to be reheated and hot held, reheat food to 165 F quickly and then hot hold above 140F.

Comments

Routine check:
Hand washing sink has hot/cold water, liquid soap, and paper towels in dispenser.
Disposable non-latex gloves also available.
Cold holding - walk in cooler and small reach in cooler - temperatures below 40F (4 C).
Display inserts - food temperatures range from 40-43 F. Do not overstock. Food items are used within 2 hours.
Hot holding - meatballs >140 F (temperature measured at 160F).
Hot holding soup - 130F however this was turned off and remaining small amount of soup to be discarded.
Temperature records are being kept.
Note reheating temperature of food prior to hot holding is to be 165 F - see above.
Chlorine solution for knife storage on prep line - required changing during inspection due to debris in water.

Triple sink - Quats sanitizer is automatically dispensed at about 200ppm. Reviewed how to properly use test strips to verify.
Quats sanitizer is used for sanitizing wiping cloths.
