Observation: Sanitation has improved since last inspection but some areas still have old hardened grease/food debris/dirt caked onto their surface:
- Floor underneath cooking line, large buildup of black dirt and grease in a pile
- Floor of walk in freezer : mixture of rust, dirt, food debris
Corrective Action(s): Clean above mentioned areas thoroughly.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: Multiple shelves made of raw wood need to be painted/finished in kitchen. Some of the wood has black mold or is rotting. Walk in freezer door is very rusty and in bad condition. Missing floor tiles in kitchen are accumulating water/dirt/grime.
Corrective Action(s): 1) Throw out all wooden shelves that are black/rotting. Replace those shelves.
2) All other shelves that are unfinished (ie. raw wood) need to be repainted and finished. These are present throughout kitchen.
3) Repaint walk in freezer door interior
4) Replace floor tiles (or fill them in until replacement can be obtained).

CLOSURE ORDER RESCINDED
Follow up inspection conducted:
-Sanitation has improved throughout kitchen: walk in cooler racks have been scrubbed to remove black dirt/rust/grime, counters and shelves have been cleaned thoroughly
-Rodent droppings have been removed
-Pest control visit was conducted, copy of report provided to EHO. Potential rodent entry hole has been filled. Per the report, improved sanitation is needed to prevent fly infestation
-Old dirty/rusting food containers across from cooking line have been discarded
-Outside door of walk in cooler and walk in freezer have been scrubbed
