On Follow-Up: The right side of the prep cooler gauge now reads 37 degF. Temperature of the foods in the inserts on this side is between 3-4 degC. The cooler, especially the right side, must be regularly monitored. If the temperature rises above 4 degC, appropriate measures must be put into place for the foods i.e. 4 hr time stamps after which foods must be discarded. If this violation is coded again, a Violation Ticket will be issued.
