Observation: Some old mice droppings noted under the mainwork station across from walk in cooler. Mice droppings indicates mice present in premises. Pest control measures noted at the time of this inspection. Snap traps and live traps noted in back room and under equipment. Issue discussed with operator at the time of this inspection

Clean droppings from under table. Ensure to use proper PPE.
Sanitize surfaces affected by mice activities.

Observation (CORRECTED DURING INSPECTION): One cutting board noted dirty, old and stained black. Food contact surfaces must be maintained clean and free of potential contaminant. Operator stated that this cutting board is not for use and only for holding dough trays in place. Operator remove the board from rack and discarded it at the time of this inspection.

Routine inspection conducted at this date.

- Hand washing stations fully supplied with liquid soap and paper towels in dispenser.
- Walk in cooler measured at or below 4C. Temp. Monitoring log maintained.
- Pizza make cooler measured at or below 4C. Keep lids closed while not in use.
- Freezers measured at or below -18C. Food is solid to touch.
- General sanitation is overall good.
- Food prep areas are well lit.
- QUAT sanitizer 200-400 ppm available.
- 3 -comp sink maintained. Staff observed washing dishware using proper wash, rinse and sanitize method. Test strips for QUAT available.
