Observation: Rubber seal in upright freezer in kitchen noted damaged and freezer door does not shut properly. Air temperature in the unit measured -9C. Food noted frozen to the touch.
Corrective Action(s): Replace the door rubber seal so that unit's door closes properly and frozen food temp maintains at or below-18C.

Comments

Routine inspection
- Hand washing stations supplied with hot/cold running water,liquid soap and paper towel in dispenser. Staff proper hand washing observed at the time of inspection. Staff general hygiene noted adequate.
- All under counter coolers measured at or below 4C. Food in walk-in cooler measured at or below 4C. Temperature monitoring log is to be maintained and kept updated.
- burgers, chicken strips measured at or above 60C in hot holding unit.
- Thermometer to measure internal temp available.
- Ice maker observed to be clean and ice scoop stored in sanitary manner.
- Sanitizer in 3-comp sink available with 200-400 ppm QUAT residue. Spray bottle available with sanitizer. Sani buckets with wiping cloths available. Dates noted and 100-200 ppm chlorine residue detected in the solution. Dirty cloths bucket noted with different lid color. Cloths are laundered on site and kept in sanitizer after wash.
- Significant improvement on lighting observed in the kitchen and dry storage. This help in general sanitation and maintenance. Lighting with shatterproof covers and ease of cleaning has been installed. Thank you!
- General sanitation is satisfactory. Floor noted clean and free from grease and build-ups. Mop sink maintained. Garbage area maintained.
- Customer washrooms noted clean and fully supplied.
- Soft drink dispensers maintained. Nozzles were clean.
- No obvious sign of pest activity noted at this date.
