306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Debris and grime build up underneath , corners, sides of the preparation tables and equipment.
Back storage area (beside private room) has clutter.
Corrective Action(s): Some areas in the kitchen require attention as they are underneath and not in plain sight. Clean grime build up underneath prep tables and equipment as well as some of the ceiling tiles in the kitchen area. Some parts of the dishwashing area as well as the broiler/mop sink room requires thorough cleaning. Back storage area requires organizing and decluttering.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: A small cooler beside the cooking area was not working properly. This cooler was empty. Sauces and other items were placed on containers with ice for the lunch rush. Ice is changed frequently to keep food cold.
Corrective Action(s): Repair this cooler immediately. Food are to be stored on ice as temporary measure only. Food items must be kept under mechanical refrigeration at all times.

Observation: Part of the flooring in the kitchen is starting to get worn out.
Corrective Action(s): Flooring in the kitchen area must be kept in good repair to ensure proper cleaning is done.

Comments

Hand sinks provided with liquid soap and paper towels.
Sanitizer (quats) was at 200 ppm.
Prep line coolers and other coolers were at or below 4 deg C (except for one- not working).
Line freezers were at -14 to -16 deg C
Walk-in freezer and upright freezers in the back was at or below -18 deg C.
Walk-in coolers were at or below 4 deg C.
Hot holding for soups was above 60 deg C.
Dipper well was working properly.
Temperature log was available and up to date.
Low temp dishwasher had chlorine residual of 100 ppm.
Dry storage area and walk-in coolers - food items were covered and off the floor.
Staff washrooms provided with sanitary facilities.
Servers' area & Bar area: Hand sinks - liquid soap and paper towels. Glassware washer - 100 ppm Cl2. Coolers at 4 deg C.
Note: Roof leak - small area in the dining room and slight leaking kitchen area. Ensure to address this issue.
