Observation: Flies noted in the facilities. Mostly in the doughnut dipping prep area.
Corrective Action(s): Maintain the cleanliness of this area, again especially the hard to reach areas, to remove any food sources for the flies. Empty mop buckets immediately after use to avoid stagnant water. Continue to work with the pest control company to deal with the flies.

Observation: Debris and buildup noted on the floor, below cabinets and sinks under hard to reach areas (most areas) in the food preparation areas.
Corrective Action(s): Clean, sweep and sanitize all hard to reach areas and maintain in a sanitary condition at all time.

Routine inspection conducted today:
All handwash stations, including staff washroom, accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were storing food at 4.0C or below.
All freezer units were storing food at -18C or below.
Hot hold units were holding food above 60C.
Food stored protected in the cooler units.
QUAT sanitizer containers were prepared and available throughout the food preparation areas - 400 PPM QUAT detected.
High temperature dish machine was noted at 76.0C at the plate level during the rinse cycle.
Manager's FOODSAFE level 1 equivalent certificate verified - expires March 3, 2025.

Reminded staff and Manager that glove use does not replace handwashing. Whenever gloved hands come into contact with soiled surfaces or whenever there is a change in activities, remove the existing gloves, wash hands then don on a new pair of gloves.
Reminded Manager that savoury pastries stored at ambient temperature at under 24C should be time stamped and discarded at 4 hours. When the ambient temperature is over 24C, the products are to be time stamped and discarded at 2 hours.
