Observation: Mouse droppings and rat droppings found in the restaurant. All droppings were found in the front service area, with the most found on the countertop underneath the fire extinguisher. One hole in the wall was observed behind this counter and two more holes in the wall were observed at the counter that is underneath the furnace.
Corrective Action(s): a) Clean all droppings with a bleach solution.
b) Hire a pest control company and provide the invoice by Friday.
c) Seal all holes which could be entry/ harbourage points for pests by Friday.

Observation: Clean all droppings and remove/ organize items that are not required for food premises operation.

Comments

-Place all food items in sealed, pest proof containers.
-Repair the lighting in the kitchen by Friday. The lights cannot be turned on (possible burnt out).

All coolers were < 4 C.
All freezers were < -18 C
Note that the front sliding door cooler is not working, but is only used for pop. The back chest freezer is not in use either.
Hand sinks supplied with hot and cold water, soap and paper towels.
Dishwasher final rinse cycle reached 50 ppm at the plate level.
