Observation (CORRECTED DURING INSPECTION): Two wraps and two salads in the cafeteria dining self-serve cooler are being stored above 4 C /40 F (air temperature 15C/ food temperature about 50F). These were put in this cooler this morning but more than 2 hours ago.
Corrective Action(s): Salads and sandwiches/wraps that have been stored above 4 C for more than 2 hours were discarded during inspection.

Routine check:
Coolers - temperature records are being kept. See above re the self-serve cooler in the cafeteria.
The cafeteria /dining area prep cooler is empty (cooler is not working properly) - ok.
The upper inserts for the prep cooler are lower risk foods or only store small volumes of food brought out frequently.
Sour cream is on ice packs and small volumes are discarded if not used over the lunch time,
Hot holding - steam table and soups - are at 60C or hotter.
Hand washing stations have liquid soap and paper towels.
Commercial dishwasher - 3rd run - 71 C was measured instide the machine. 180 F measured at the gauge - ok.
Quats - 100ppm detected in bucket used to store wiping cloths. This is changed every 2 hours and 200ppm is dispensed for fresh sanitizing solution.
