Observation: Two door prep cooler by the hand sink is still not keeping an air temperature of 4 C /40 F or colder.
Higher risk foods are being kept on ice in this cooler which is keeping the food temperature down.
The upper lid is being kept shut.
Corrective Action(s): Continue using ice and keeping the lid down on this cooler. Fix /repair so that the air temperature can be maintained at 4 C or colder.

The walk-in cooler is also keeping food above 4 C. Seafood and raw meat are in a separate cooler at 4 C.)
Comments

*The walk-in cooler air temperature at the fan upper level is below 4 C. An additional thermometer is available.
Keep twice daily temperature records and ensure adequate air circulation for this cooler.
Discussed the food storage room requirements with operator with respect to hand washing.
Received cheque 2798 re permit fee.
