- Hand washing stations were properly supplied with hot and cold running water, liquid soap, and paper towels
- Bleach sanitizer solution available at 200 ppm (chlorine) in sanitizer pail (a minimum of 100 ppm is required) - good.
- Low-temperature chemical dishwasher dispensed 200 ppm chlorine to dish surface, detected after the rinse cycle - good. Ensure the chlorine concentration does not exceed 200 ppm.
- New prep cooler in place of old one. Ambient temperature measured at 3C.
- Walk-in cooler and all other coolers were measured at 4C or colder.
- Freezers were measured at -18C or colder
- Roast in hot holding unit was measured to be well above 60C. Other hot-holding unit for soup was no longer in use for the day.
- Accurate thermometers available
- Food storage practices satisfacotry
- All equipment maintained in sanitary conditions and in good working order.
- General sanitation is good
- No signs of pest activity noted
