209 - Food not protected from contamination [s. 12(a)] Observation: - Multiple buckets of curry stored in walk in freezer were not covered. - A bag of potatoes was stored directly on the floor of walk in freezer. Corrective Action(s): To prevent the risk of food contamination, ensure that all the food products are properly covered with lids or food grade material and stored at least 6 inches off the floor. TO BE CORRECTED BY - Immediately Violation Score: 3 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)] Observation: REPEATED VIOLATION Ice build up and flurries noted in the walk in freezer during inspection. Glue tape on the ceiling was covered with ice and was partially falling off. Floor of the walk in freezer had dirt build up. It seems like the wood floor is retaining moisture. Corrective Action(s): Service the walk in freezer and ensure that it is maintained in good working order and sanitary condition. All walls, floor, ceiling and contact surfaces must be made of smooth, impervious and easy to clean material. TO BE CORRECTED BY - Immediately Violation Score: 9

Follow up inspection conducted to routine inspection (report #TGIL-CGARZE) Findings: - Improvement noted in terms of rodent activity. Side door was properly closed. No flies noted inside the facility. - Low temp mechanical dishwasher was functioning properly. 50ppm chlorine residual noted during rinse cycle. - Walk in freezer door seal has been replaced. Good. - See violation above for walkin freezer.
