Observation (CORRECTED DURING INSPECTION): Drawer cooler below onion ring drawer was at 10 deg C. Busy period just passed (2 hrs or less).
Corrective Action(s): Potentially hazardous foods removed and stored in the walk-in cooler. Monitor this cooler and do not store potentially hazardous foods until 4 deg C or below.

Observation (CORRECTED DURING INSPECTION): Wiping cloths were found sitting on counter tops.
Corrective Action(s): Ensure to store all wiping cloths in sanitizing solution at all times when not in use.

Comments

Health permit posted in prominent location.
Hand sinks equipped with liquid soap and paper towels in dispensers.
Sanitizer (quats) measured 200 ppm (solution in buckets).
High temp dishwasher reached 73 deg C at plate surface.
Walk-in cooler was at 4 deg C. Walk-in freezer was at -10 deg C (busy open/close or may be in defrost cycle).
Line freezers were at -12 deg C. Keep lids closed properly.
Hot holding for beef patties, chicken breast, chicken strips and gravy was above 60 deg C.
Temperature log was available and up to date.
Staff wearing clean uniforms and hair nets.
A few flies were noted at time of inspection. Some fly straps hanging above the front service counter.
Consult with pest control company for types of fly control (blue lights, coil, etc.) and proper location for installation.
Interior pest control is the responsibility of the operator.
Food items were stored off the floor.
General sanitation was satisfactory at time of inspection.
Staff washroom and patrons washrooms were in sanitary condition and provided with liquid soap and paper towels.
