Observation: - Kitchen handsink (between milk dispenser and waffle maker) water is not mixed at a suitable temperature to facilitate proper handwashing practices. Water measured at 54.1C and appears too hot for food handlers to properly wash their hands. Observed food handlers unable to adequately wet and rinse soapy hands as water was too hot.
Corrective Action(s): - Adjust water temperature mixing valve. Water temperature between 38C to 49C would be acceptable.

Observation: - The following areas require thorough cleaning:
- Garbage and food debris accumulation under bar equipment/ shelving.
- Grease and food debris accumulation under, between, and behind kitchen cook line (grill, fryers, etc).
- Floors and walls in dishwashing area.
Corrective Action(s): - Thoroughly clean the above noted areas and all other surfaces and hard to reach areas.

Observation: - Dishwasher drain is backing up after each rinse cycle. Operator has placed plastic over drain pipe to contain waste water from backflowing; however, there is still some waste water backflowing onto kitchen floor.
Corrective Action(s): - Correct plumbing issue. Waste water must drain entirely into designated drain and not back up into kitchen.
- Once corrected, disinfect area with 1000 ppm chlorine bleach solution (400 mL chlorine bleach + 20 L water).

Note: Kitchen floor drain is approximately 2 meters from back flowing drain. Backflow waste water is draining into floor drain. General Manager is aware of problem and has scheduled for a plumber to address and correct problem.

- Cook and prep line utensils stored in ice water between uses.
- Dipper well in use for ice cream scoops.
- Wiping cloths stored in 200 ppm QUATS.
