Observation: Three rodent bait traps observed in the back storage room.
Corrective Action(s): Remove the bait traps from the kitchen as soon as possible.

Observation: a) Ventilation duct in the back kitchen is leaking, with a garbage bin placed underneath it to contain the leak.
b) 2-compartment sink on the pasta/ doughnut side of the kitchen is turned off. Operator states that the hot water was not working properly.
Corrective Action(s): a & b) Fix within two weeks and provide confirmation that both items have ben repaired.

Comments

Bar:

The glasswasher had 12.5 ppm Iodine. Records were up to date and test strips were available.
Beer lines are cleaned monthly by a professional company.

Back kitchen:

The dishwasher had 100 ppm chlorine when tested. Records up to date and test strips were available.
Ice baths are used for cooling pasta sauces.
Reviewed cleaning procedures for equipment such as the pasta machine and sheeter.
Ice machine was clean. Ensure that it is cleaned monthly.
Shellfish tags are kept for 6 months for clams and mussels.

General:

All coolers were < 4 C.
All freezers were < -18 C.
Hot holding temperatures were > 60 C.
Quats sanitizer solution was measured at 200ppm. Test strips were available.
Pest control report available for review. A small number of droppings was found in the room with the mixing bowl, ensure that they are cleaned with a 100 ppm bleach solution.
Staff washrooms were supplied with hot and cold water, soap and paper towels.
Hand washing sinks were supplied with hot and cold water, soap and paper towels.
Ventilation hoods were clean.
